1 tsp coriander seeds, toasted and ground
1 tsp sweet paprika
Pinch nutmeg (freshly grated)
1 bay leaf
5 cups (720 ml) vegetable or chicken stock
1 ½ cups (360 ml) coconut milk (full fat, unsweetened)
Juice of ½ lemon (optional)
Fresh coriander or parsley to garnish
