In a big bowl, add glutinous rice, white rice, millet, and beans. Rinse them off and soak them in water overnight.

Roast chestnuts: Cut a cross through the outer skin of each chestnut. Place them cut side up on a tray and roast in the oven for 30 minutes until the skins open. Let them cool enough to peel.

Remove the skins of Chinese dates: Soak the dates in water overnight. Boil the dates for around 15 minutes, then peel off the skin and scrape off the date meat.

In a big pot, add 6 cups cold water, then add the soaked rice and beans. Cook over medium-high heat until it simmers, then turn to medium-low heat. Add in the chestnuts and simmer for about 30 minutes until the texture becomes thick and sticky. Then add water chestnuts and dates, cooking for another 10 minutes.

If your nuts are raw, toast them in a preheated oven at 325°F for 5 to 10 minutes. Chop them into smaller pieces after cooling.

Serve the porridge hot, sprinkling with raisins, nuts, and a spoon of sugar or any sweetener you prefer.
