Cut pork shoulder into bite-sized pieces.
Season pork with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear pork pieces until browned on all sides, about 5-7 minutes.
Remove pork from skillet and set aside.
In the same skillet, add chopped onions and sauté until translucent, about 3-4 minutes.
Add minced garlic and cook until fragrant, about 1 minute.
Stir in sliced bell peppers and carrots, cooking for another 5 minutes.
Add tomato paste, sugar, and soy sauce, stirring to combine.
Pour in white wine vinegar and water, scraping up any browned bits from the skillet.
Return pork to the skillet and add bay leaves.
Cover and simmer on low heat for 30-40 minutes, until pork is tender.
Adjust seasoning with salt and pepper as needed.
Remove bay leaves before serving.
Garnish with fresh parsley before serving.
