Cut one brown onion into quarters.

Get a large saucepan that can fit the gammon and cover it with water.

Place the gammon into the pan.

Add the quartered onion, chopped carrot, chopped parsnip, and halved garlic into the pan.

Add 2 bay leaves, 2 star anise, 1 teaspoon of cloves, 1 teaspoon of black peppercorns, and a sprig of sage into the pan.

Top the pan up with cold water until the gammon is covered by about 2 inches.

Place the pan over high heat and bring it to a boil.

Once boiling, reduce the heat to low and let it simmer.

Cook the gammon for 20 minutes for every 500 g of meat; for a 2 kg gammon, cook for 80 minutes.

In a mixing bowl, combine 150 g of runny honey and 50 g of whole grain mustard.

Add the juice of 3 satsumas to the bowl (or use 1 large orange or 2 medium oranges).

Mix everything together until well combined and set aside.

Once the gammon is cooked, remove it from the water and place it on a cooling rack over a tray to drain.

Carefully remove the skin from the gammon, leaving as much fat on the meat as possible.

Score the fat on an angle going both ways to create a diamond pattern.

Preheat the oven to 180°C.

Place the gammon into the preheated oven for 15 minutes.

After 15 minutes, take it out and spoon over 1/3 of the glaze, ensuring it's completely coated.

Place it back into the oven for 5 minutes.

After 5 minutes, take it out and add another third of the glaze.

Place it back into the oven for another 5 minutes.

Repeat with the remaining glaze and place it back into the oven for 5 minutes.

After the final 5 minutes, remove it from the oven and baste it with the sticky glaze that has run off onto the tray.
