Today, dumplings have gained global popularity, with countless variations and fillings reflecting local tastes.

Marinate 1 pound of ground pork with salt.
Grate ginger and garlic, then add to the meat.
Add 1 tablespoon soy sauce, 1 teaspoon rice wine, 1 tablespoon white pepper, 1 tablespoon sugar, and 1 tablespoon sesame oil to the meat and mix well.
Gradually add water, 1 tablespoon at a time, and mix until combined.
Chop spring onions and add to the meat mixture, then cover with cling wrap and refrigerate for 30 minutes.
Chop cabbage into small pieces and add to the meat mixture, then mix well.
Scoop a tablespoon of filling and place it in the center of a dumpling wrapper.
Wet the edge of the wrapper with plain water, pinch in the middle, and start pleating by folding and pinching the edges to seal.
Heat 1 tablespoon of cooking oil in a pan and arrange the pot stickers in the pan.
Cook until golden brown, then add 2 tablespoons of water, cover, and simmer for 3 minutes until the water evaporates.
Flip the pot stickers onto a plate and check for crispiness.
Prepare the dipping sauce with light soy sauce, black vinegar, hot sauce, and ginger.
Serve the pot stickers with the dipping sauce and enjoy.
For boiled dumplings, transfer them to a bowl and prepare a sauce with 1 teaspoon light soy sauce, 1 teaspoon black vinegar, hot sauce, and sugar.
Drizzle the sauce over the boiled dumplings and garnish with spring onions.
