3-4 pounds pork butt roast (also known as pork shoulder)
1 and 1/2 cups orange juice
1/2 cup lime juice
2 tablespoons garlic oil
1 chicken stock cube (Massell 7 chicken flavor)
2 teaspoons cumin
1 teaspoon oregano
black pepper
1/3 cup brown sugar
1 bay leaf
1/2 teaspoon cumin seeds
1/4 teaspoon peppercorns
1 cup and a half raw rice
1 can black beans (drained and rinsed)
2 tablespoons garlic oil (for rice)
juice of 1 lime (for rice)
1/2 cup chopped cilantro (for rice)
1/4 cup chopped green onions (for rice)

Juice 6 oranges and 4 limes to get 1 and 1/2 cups of orange juice and 1/2 cup of lime juice, strain the pulp and seeds.

Add cilantro stems and tops of 2 green onions to the juice mixture.

Add 1 tablespoon of garlic oil, 1 chicken stock cube, 2 teaspoons of cumin, 1 teaspoon of oregano, and black pepper to the mixture.

Blend the mixture until smooth and green.

Cut the pork butt roast into smaller chunks for faster cooking.

Turn the Instant Pot on to sauté and salt the pork generously.

Add 1/3 cup of brown sugar to the pork and sear each side for about 4 minutes.

Scrape the sugar bits off the bottom of the pot, then add 1/2 teaspoon of cumin seeds, 1 bay leaf, and 1/4 teaspoon of peppercorns.

Add the blended sauce to the pot and bring it to a simmer.

Thicken the sauce with a cornstarch slurry made of 1 tablespoon of cornstarch and 2 tablespoons of cold water.

Add the pork back into the pot with the sauce.

Pressure cook for 1 hour, allowing extra time for the pot to pressurize.

While the pork cooks, prepare the rice and beans by cooking 1 and 1/2 cups of raw rice and adding 1 can of drained black beans, 2 tablespoons of garlic oil, juice of 1 lime, chopped cilantro, chopped green onions, and salt to taste.

Once the pork is done, shred it and serve over the cilantro lime rice and beans.
