Kajmak is a traditional dairy product from the Balkans, particularly popular in Serbia. It is often enjoyed with bread, grilled meats, or as a spread, symbolizing the region's rich pastoral heritage. This creamy delicacy has gained popularity beyond its borders, with variations appearing in neighboring countries and among culinary enthusiasts worldwide.
Heat milk in a large pot over medium heat until it begins to simmer.
Remove from heat and let the milk cool slightly, about 10 minutes.
Add lemon juice and stir gently to combine.
Cover the pot with a lid and let it sit at room temperature for 12-24 hours.
Once the mixture has thickened, transfer it to a cheesecloth-lined strainer.
Allow the whey to drain for several hours or until desired consistency is reached.
In a separate bowl, mix the drained curds with salt and softened butter.
Incorporate yogurt for tanginess and creaminess.
Add minced garlic and chopped fresh herbs for flavor.
Taste and adjust seasoning as necessary.
Transfer the kajmak to a serving dish and refrigerate until ready to serve.
