Combine all-purpose flour, sugar, and salt in a mixing bowl.
Add cold cubed butter to the dry ingredients, incorporating it until it resembles corn flakes with larger pieces of butter.
Place the mixture in the freezer until the butter hardens again.
Add a tablespoon of cold water to the mixture, tossing until the dough starts to clump together.
Bring the dough together gently without overmixing, then wrap it in plastic wrap and refrigerate overnight.
Roll out the dough on a floured surface until it's about 1/8 inch thick.
Cut the dough into squares or triangles, ensuring even shapes.
Fill the center of each triangle with a tablespoon of raspberry jam.
Brush the edges with egg wash, fold the dough over, and crimp the edges with a fork to seal.
Place the filled triangles in the freezer for 45 minutes to 1 hour to firm up.
Brush the tops with egg wash and sprinkle brown sugar on top.
Bake at 385°F for 15-20 minutes until lightly golden brown.
Allow to cool completely before serving.
