30g (4 tablespoons) plain flour
90g (½ cup) semolina
110g (½ cup) butter
100g (½ cup) sugar
3 egg yolks
2 egg whites

Finely chop the dried fruit mix (600g or 4 cups) including raisins, sultanas, dried cranberries, dried apricots, dates, cashew nuts, dried papaya, pineapple bits, and candied peel bits.

Add 2 tablespoons of spice mix (Cinnamon powder, Allspice powder, and Cardamom powder) to the fruit mix.

Add 3 tablespoons of golden syrup, 3 tablespoons of rum or brandy, 2 teaspoons of vanilla extract, and optional flavorings like 1 teaspoon of lemon essence and 1 teaspoon of rose essence. Mix well.

Cover the mixture and leave it to rest for a few hours or up to a few weeks. (This fruit mix rested for 2 days.)

Add 3 tablespoons of strawberry jam or jelly to the fruit mix and mix well. Set aside.

In a separate bowl, dry toast 90g (½ cup) of semolina on medium heat for about 1-2 minutes and let it cool down.

In a large bowl, add 110g (½ cup) of butter and 100g (½ cup) of sugar. Whisk together for 2-3 minutes.

Add 3 egg yolks one at a time, whisking for 10 seconds after each addition.

Add the cooled semolina and whisk at low speed for about 15 seconds.

Add the fruit mix to the batter and mix well.

In another bowl, whisk 2 egg whites until firm peaks form, then add to the batter and mix well until combined.

Prepare a 20x20 cm baking pan lined with 3-4 layers of parchment paper on the bottom.

Add the batter to the prepared baking pan and smooth the top.

Bake in a preheated oven at 160°C (320°F) for 30 minutes, then lower the temperature to 140°C (284°F) and bake for an additional 50-60 minutes.

Check with a skewer to see if it's done.

Optionally, spread apple jam or jelly over the top or add a marzipan layer on top.
