440g treacle or molasses/golden syrup
5 eggs, beaten
250g plain flour
60g self-raising flour

Preheat the oven to 140C/275F.

In a large mixing bowl, combine the mixed dried fruit, brown sugar, orange juice or brandy, water, and baking soda.

Melt the butter and add it to the mixture along with the lemon zest, orange zest, chopped walnuts, treacle or molasses, and beaten eggs. Mix well.

Gradually fold in the plain flour and self-raising flour until just combined.

Pour the batter into a greased 23cm cake tin.

Bake in the preheated oven for 2 hours and 45 minutes.

Once cooked, remove from the oven and cover with foil.

Allow to cool in the tin for a couple of hours or overnight.
