3 spicy green chillies
2 spicy dried red chillies
1 sliced onion
1/4 tsp turmeric powder
3 tomatoes
salt to taste
water
fresh coriander leaves
juice of 1 lemon

Heat a pan on high flame, then lower the flame.

Add 2 tbsp white soya beans and roast until the outer skin cracks, about 3-4 minutes.

Add 2 tbsp white sesame seeds and roast until they start crackling.

Transfer the roasted soybeans and sesame seeds to a bowl.

In the same pan, add 1/4 cup peanuts and roast on low flame until done, then transfer to a bowl.

Let all roasted ingredients cool to room temperature.

In a pan, add 2 tbsp oil and heat it.

Add 1 tsp cumin seeds, 10 Triphal, 12 cloves garlic, 3 inch ginger, 3 spicy green chillies, and 2 spicy dried red chillies. Cook for 1 minute.

Add 1 sliced onion and cook on high flame until softened, about 1-2 minutes.

Turn the flame low, add 1/4 tsp turmeric powder, and cook for a bit.

Add 3 roughly chopped tomatoes, coriander stems, and salt to taste. Cook on high flame for 4-5 minutes.

Add hot water, stir well, cover, and cook for 10-12 minutes until tomatoes are softened.

Let the mixture cool to room temperature.

Transfer the cooled mixture to a mixer jar, add the roasted soybeans, sesame, peanuts, fresh coriander leaves, and water. Grind into a fine paste.

Add more water to achieve desired consistency and taste for seasoning, adjusting with salt and juice of 1 lemon as needed.

To serve, heat the mixture, adjust consistency with more water, add a pinch of sugar, and bring to a boil for 3-5 minutes.
