Preheat the oven to 350°F (175°C).
Melt butter in a small saucepan over low heat.
Layer phyllo pastry sheets in a greased baking dish, brushing each layer with melted butter.
Mix chopped nuts, sugar, and cinnamon in a bowl.
Spread a layer of the nut mixture over the phyllo layers.
Continue layering phyllo and nut mixture until all ingredients are used, finishing with phyllo on top.
Cut the assembled byrek into diamond shapes with a sharp knife.
Bake in the preheated oven until golden brown, about 30-35 minutes.
Meanwhile, combine water, sugar, lemon juice, and vanilla in a saucepan.
Bring the syrup mixture to a boil, then reduce heat and simmer for 10 minutes.
Remove the byrek from the oven and pour the syrup evenly over it.
Allow to cool before serving.
