Cut crusty French loaf into half-inch cubes using a sharp serrated knife.
Spread bread cubes out on a baking sheet to dry out.
To dry bread, either let it sit in an oven that is off overnight or bake at 200°F for about an hour, shaking every 15 minutes.
Chop onion and celery.
Melt a lot of butter in a large skillet over medium heat.
Add chopped onion and celery to the melted butter and cook for 4-5 minutes until soft and translucent.
Add fresh sage, thyme, and parsley to the skillet.
Pour in vegetable broth and bring to a simmer, then turn off the heat.
Stir in the dried bread cubes until they are soaked with the broth mixture.
Mix in 2 beaten eggs until well combined.
Pour the mixture into a well-greased baking dish.
Cover the baking dish with foil and bake for about 30 minutes until heated through.
Remove the foil and bake for an additional 15 minutes to crisp the top.
