Mix 3 cups of semolina and 2 cups of sugar together well between your palms.
Add 1/2 cup of vegetable oil and mix it well with the semolina and sugar.
Add 1/2 cup of buttermilk and mix well.
Add 1/2 cup of orange blossom water and mix again.
Incorporate 1 cup of almonds or peanuts and 1/2 teaspoon of ground cinnamon, adjusting to taste, and mix well.
Grease a pan with a little oil using a brush.
Spread half of the mixture in the pan without pressing down.
Add a filling if desired, then spread the remaining mixture on top.
Tap the top to make it even and cover any openings.
Preheat the oven to 390°F (200°C) for 50 minutes, checking periodically.
Prepare syrup by boiling 3 cups of water with 1.5 cups of sugar and 1/2 lemon for 15 minutes, then add 1 tablespoon of orange blossom water.
Apply the cold syrup over the baked dish and let it sit for 45 minutes to an hour before serving.
