Kimbula Buns

Cultural Context

Kimbula Buns, or 'Crocodile Buns', are a beloved Sri Lankan treat, named for their unique shape resembling a crocodile. Traditionally enjoyed during festivals and special occasions, these sweet, fried buns are filled with a rich palm sugar mixture, offering a delightful contrast to their crispy exterior. While they remain a staple in Sri Lankan cuisine, variations have emerged globally, with different fillings and shapes reflecting local tastes.

1

Mix 350 g of all-purpose flour with 2 tbsp of instant dry yeast, 8 tbsp of room temperature milk, and 2 tbsp of sugar in a mixing bowl; give all the ingredients a quick mix.

2

Add 1 large egg and mix again until everything is well combined.

3

Add 0.5 tsp of salt and mix quickly.

4

Add 2 tbsp of soft room temperature butter and knead the dough for 5 to 10 minutes until it becomes smooth and elastic.

5

Rub some coconut oil to cover the mixing bowl and also on top of the dough; cover with plastic wrap and let it rest to rise for about 1 hour or until it doubles in size.

6

After the dough has doubled in size, take it out of the mixing bowl and shape it into a ball; cut the dough ball into six evenly sized rectangular pieces.

7

Flatten each piece while maintaining the rectangular shape, then roll each piece from one end to the other to form a log-like shape.

8

Place the rolled buns on a parchment paper-covered baking tray and cover them with a kitchen towel.

9

Mix 2 tbsp of sugar with 2-3 tbsp of water in a small pan and stir on medium heat until the sugar dissolves to create a sugar syrup.

10

Brush each bun with the sugar syrup, covering the entire surface, then generously sprinkle sugar over each bun for a sweet crunchy topping.

11

Bake the kimbula buns in a preheated oven at 375°F (190°C) for about 15 to 20 minutes or until they are golden brown and have a slightly crisp crust.
