Brush a plate or tray with oil and place the dough balls on it, brushing the tops with oil to prevent sticking.
Cover the dough balls with cling film and refrigerate for at least 1 hour to relax the gluten.
After resting, check the dough balls for softness and stretchability.
Prepare the eggs by cracking and whisking them one by one, keeping them ready for cooking.
Heat a frying pan over medium to high heat and grease the surface with oil.
Take a dough ball, flatten it, and stretch it out until thin enough to see the table through it.
Place the stretched dough into the hot pan and immediately pour in the whisked egg, seasoning with salt and pepper.
Use a spatula to fold the dough over the egg to create a parcel.
Cook the roti, flipping it every 30 seconds until golden brown all over, adding more oil if necessary.
While the first roti is cooking, stretch out the next dough ball and repeat the process until all are cooked.
