Heat 1 tablespoon of white oil in a pan.
Add 5 to 6 roughly chopped curly leaves and sauté for 1 minute on low flame.
Add 2 medium sized thinly sliced onions and fry for 1 minute.
Add 2 medium sized sliced tomatoes and cook for 2 minutes.
Add 6 to 8 soaked dry red chillies and sauté for 1 minute.
Add a handful of scallions and a handful of coriander leaves.
Dry roast sesame seeds and mix them in the pan.
Add salt to taste and 1/2 cup of water, mixing well.
Cover the pan and cook for 4 to 5 minutes on low flame.
Open the lid and mix well, ensuring the tomatoes are nicely cooked.
Transfer the mixture to a blender jar and add 1 teaspoon of vinegar.
Blend to make a fine paste, being careful of the spiciness when opening the lid.
The hot sauce is ready; serve with steaming hot Momos or roasted veggies.
