Make a cut along the collar bone to the spine of the fish, keeping the skin intact.
Debone the fish while keeping the fillet intact, removing pin bones with tweezers.
Season the inside of the fish with garlic oil, salt, and lemon zest.
Season the outside of the fish with a generous amount of oil and salt.
Place the fish on the grill, ensuring the skin is crispy before flipping.
Transfer the fish to a 450-degree convection oven for about 6 minutes.
Prepare vegetables (delicata squash, white sweet potatoes, shallot, kale) for roasting.
Make a vinaigrette with minced garlic chives, champagne vinegar, salt, and olive oil, without emulsifying.
Roast the vegetables in the oven at 450 degrees for 8-10 minutes.
Prepare a sweet potato puree as a base for serving.
Glaze the cooked fish with a sauce made from fish stock or alternative sauces like ponzu or barbecue sauce.
Plate the roasted vegetables on top of the sweet potato puree and place the fish on top.
Finish with a garnish and serve.
