In a large bowl, add 2 cups of flour and approximately 1 teaspoon of salt, adjusting to taste.

Gradually add water, mixing until you achieve a super smooth texture, aiming for a thicker, sticky consistency.

Set the mixture aside after mixing.

Turn the burner to medium-high heat and add the chopped onions to a pan, allowing them to sweat and absorb moisture.

Once the onions are soft and starting to stick, add 1.5 tablespoons of avocado oil and continue to cook until they are soft and slightly colored.

Add minced garlic and chopped jalapeno to the pan, mixing well and cooking for about 30 seconds until fragrant.

Stir in 1 tablespoon of berbere spice and allow it to cook out for a couple of minutes, adding a little more water if needed to soften the mixture.

Add the blended tomatoes and 1 cup of water to the pan, mixing well and covering with a lid to cook on low heat.

Prepare another pan by turning the burner to medium-high heat and adding a little oil, spreading it with a paper towel.

Using wet hands, scoop some of the flour mixture into the hot pan, spreading it out evenly and cooking for about 3-4 minutes until the top dries out.

Flip the mixture over after 3-4 minutes and cook for another 3-4 minutes until fully cooked, then set aside to cool.

Tear the cooked mixture into bite-sized pieces once cooled.

Check on the sauce, adding salt to taste (starting with 1 heaping teaspoon) and mixing well.

Lower the heat and add the torn pieces into the sauce, mixing to ensure they are submerged and soft.

Cook for an additional 2-3 minutes until the texture is to your liking, then turn off the heat and serve.
