Almond milk is lower in calories, while water keeps the recipe simple.
Add 2 cups of all-purpose flour to a large bowl.
Add baking powder, baking soda, sugar, and salt to the flour and whisk together.
Set the flour mixture aside and melt the butter.
Take the cold buttermilk out of the refrigerator.
Pour the melted salted butter into the cold buttermilk and mix them together until slightly chunky or slushy.
Pour the butter and buttermilk mixture into the flour mixture.
Use a fork to mix until just combined, ensuring not to overmix.
Drop spoonfuls of dough onto a parchment-lined baking sheet using a large cookie scoop or a 1/4 cup measuring cup.
Space the biscuits apart on the baking sheet and pop them into the oven preheated to 425°F (218°C).
Bake for 13 to 15 minutes until golden brown on top.
Remove from the oven and optionally brush the tops with extra melted salted butter.
