Buttermilk Drop Biscuits

1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup unsalted butter, cold and cubed
1 cup buttermilk

Preheat your oven to 450°F (230°C).

In a large mixing bowl, combine the flour, baking powder, baking soda, and salt.

Add the cold, cubed butter to the dry ingredients and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Pour in the buttermilk and stir gently until just combined. Do not overmix.

Using a spoon or ice cream scoop, drop heaping tablespoons of the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
