In a large stock pot, add the salt pork.

Add 1 diced onion and 3 chopped carrots to the pot.

Wash and drain 1 pound of dried green split peas and add them to the pot.

Pour in 10 cups of water and add 2 bay leaves.

Bring to a low boil over medium heat and cover; cook for 1.5 to 2 hours or until the peas are cooked.

Remove the salt pork and cut the meat into smaller bite-sized chunks, then return the meat to the pot.

If you want a thicker soup, remove the lid and allow the soup to bubble to evaporate some liquid.

Adjust salt and pepper to taste.
