Boil plenty of water in a pot.
Gradually add yam to the boiling water and add a little salt.
Allow yam to boil for 10 to 15 minutes depending on the quantity.
Check the yam after 10 to 15 minutes; once done, set the water aside.
In a pan, add vegetable oil and palm oil together and heat until warm.
Add sliced onions to the heated oil and sauté.
Add sliced tomatoes, red bell pepper, and green bell pepper; stir for about 2 minutes.
Add tiny sliced carrots and continue to stir for another 2 minutes.
Add ginger and garlic paste; stir for another 2 minutes.
Add curry powder and one and a half seasoning cubes, adjusting based on the sauce quantity.
Add frozen spinach, ensuring to remove any bones if using smoked fish.
Stir for a little time, ensuring not to overcook the spinach.
Serve the vegetable sauce with yam.
