Meanwhile, prepare the filling by grinding poppy seeds and mixing them with sugar and lemon zest.
Once the dough has risen, punch it down and roll it out on a floured surface.
Cut the dough into circles and place a spoonful of poppy seed filling in the center of each.
Fold the dough over the filling and pinch to seal, forming a pie shape.
Place the pies on a baking sheet lined with parchment paper and brush with egg wash.
Let the pies rise for another 30 minutes before baking.
Preheat the oven to 180°C (350°F) and bake the pies until golden brown, about 20-25 minutes.
Allow to cool slightly before dusting with powdered sugar and serving.
