Instructions
- 1Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- 2Place one tortilla in the skillet and sprinkle half of the cheddar and mozzarella cheese evenly over it.
- 3Add half of the diced bell peppers, onions, and cilantro on top of the cheese.
- 4Sprinkle garlic powder, cumin, salt, and black pepper over the vegetables.
- 5Top with another tortilla and press down gently.
- 6Cook for about 3-4 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
- 7Carefully flip the quesadilla using a spatula and add the remaining olive oil to the skillet.
- 8Cook for another 3-4 minutes until the second side is golden brown and the cheese is fully melted.
- 9Remove from the skillet and let it cool for a minute before cutting into wedges.
- 10Serve warm with salsa or sour cream on the side.
