Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. 1Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. 2Place one tortilla in the skillet and sprinkle half of the cheddar and mozzarella cheese evenly over it.
  3. 3Add half of the diced bell peppers, onions, and cilantro on top of the cheese.
