1/4 cup water (60ml)
1/4 cup distilled white vinegar (60ml)
1 tablespoon tomato paste (15g)
1 tablespoon pepper sauce (e.g., Tabasco) (15ml)
1 tsp dried red chillies (1.89g)
1/2 teaspoon salt (2g)
1/4 teaspoon paprika (0.575g)
1/8 teaspoon cayenne pepper (0.25g)
1 teaspoon garlic powder (2g)
1/4 tsp xanthan gum (0.49g, optional)
1/8 teaspoon sodium benzoate (0.24g, optional)

Combine sugar, glucose syrup, water, distilled white vinegar, tomato paste, pepper sauce, dried red chillies, salt, paprika, cayenne pepper, and garlic powder in a saucepan.

Bring the mixture to a boil over medium heat, stirring occasionally.

Reduce heat and simmer for a few minutes until the sauce thickens slightly.

If using, mix xanthan gum with a small amount of water to create a slurry and add it to the saucepan, stirring constantly.

Continue to cook for an additional 2-3 minutes until the sauce thickens to desired consistency.
