Thai chilies

Add Thai chilies and long red chilies to a food processor and give them a rough chop until nicely chopped but not pureed.

Transfer the chopped chilies to a bowl.

In a pot, combine the processed chilies, 1/2 cup water, and 1/2 cup rice vinegar.

Add 1/4 cup sugar, 1 tablespoon chili flakes, 1 tablespoon fish sauce, 1 teaspoon minced garlic, and 1 tablespoon minced ginger to the pot.

Make a cornstarch slurry by mixing 1 tablespoon of cornstarch with a bit of water.
