Preheat the oven to 350°F (175°C).
Grease a baking dish with melted butter.
Layer sheets of phyllo dough in the dish, brushing each layer with melted butter.
Chop walnuts and mix with sugar and cinnamon in a bowl.
Spread a layer of the walnut mixture over the phyllo layers.
Continue layering phyllo and walnut mixture, finishing with phyllo on top.
Cut the baklava into diamond shapes before baking.
Bake in the preheated oven until golden brown, about 45 minutes.
While baklava bakes, combine water, sugar, honey, lemon juice, and vanilla in a saucepan.
Bring the syrup to a boil, then reduce heat and simmer for 10 minutes.
Remove baklava from the oven and immediately pour the syrup over it.
Allow baklava to cool completely before serving.
