Cut walnuts into small pieces.
Toast walnuts in a dry skillet over medium heat until fragrant.
Transfer honey into a small saucepan and heat on medium until it thins.
Add sugar to the honey and stir until it crystallizes and resembles caramel.
Drop in the toasted walnuts and mix rapidly to coat them with the caramel mixture.
Prepare a cutting board with a wet towel underneath to prevent movement.
Grease the cutting board with oil and pour the kozinaki mixture onto it.
Shape the mixture into a rectangular form using a rolling pin.
Cut the kozinaki into squares while still hot, as it will harden quickly after cooling.
