Start by boiling 4 cups of water in a pot over medium-high heat.
Add the potatoes to the boiling water and cook for around 5 minutes.
Check the potatoes; if they are slightly tender but not overcooked, drain the water and cool for around 3 minutes.
Grate the cooled potatoes using a grater, being careful with your fingers.
Transfer the grated potatoes into a bowl.
Add 1/2 teaspoon black pepper, 1 teaspoon paprika, 1 teaspoon garlic powder, 1/4 teaspoon cayenne pepper, 1/3 cup corn flour, and salt to the bowl with potatoes.
Crack in 1 egg and mix everything together until combined.
Scoop out around a tablespoon of the mixture and form it into a square or rectangular patty, dipping your hands in water if the mixture sticks.
Heat cooking oil in a pan over medium heat for around 30 seconds to a minute.
Carefully drop the patties into the hot oil one at a time, avoiding over mixing the mixture before frying.
Cook the patties for around 2 minutes until they start to crisp up, then flip them to cook the other side.
After a minute, use a spatula to check the patties and ensure they are golden brown.
Once ready, shake off the excess oil and transfer the patties to a plate lined with kitchen paper towel.
Repeat the frying process for the second batch of patties.
While frying the last batch, heat 3 tablespoons of cooking oil in another pan over medium heat for around 30 seconds.
Crack in eggs to fry for around 30 seconds to a minute until they are cooked to your liking.
