Add 2 oz of dried mushrooms to a bowl.

Pour 1/3 cup of boiling water over the mushrooms and let sit for 5 minutes.

Peel and dice 6 beets into 1/2 inch cubes.

Reserve 2 cups of the cooking liquid from the beets.

Melt 1 tbsp of butter in a pot on the stove.

Add the diced beets, rehydrated mushrooms with liquid, and 1/2 cup of freeze-dried onions to the pot.

Stir in 1 tsp of sugar, 1 tsp of lemon juice, and 2 cups of beet cooking liquid.

Add 4 cups of chicken broth and season with salt and pepper to taste.

Bring the mixture to a simmer and keep it there for 5 minutes.
