In a large bowl, add all-purpose flour, baking powder, and salt.
Mix in melted butter until well combined.
Add grated cassava and mix well, ensuring the cassava is incorporated with the flour.
Stream in warm water gradually until a semi-soft dough forms, making sure it’s not too sticky.
Cover the dough with a damp paper towel and let it sit for about 30 minutes.
Flour the surface and break the dough into equal-sized balls, rounding them off between your palms.
Flour the surface again and roll out each ball into a thin disc.
Oil the towel slightly to prevent sticking before placing the rolled dough on it.
Cook on medium to medium-high heat until the color changes and bubbles form, then flip it over.
Oil the first side of the roti, then oil the second side and cook for 1 to 2 minutes on each side until golden brown.
