Prepare half of the recipe, which is nourishing. You can double the ingredients if desired.

In a bowl, add 50 g of softened butter, 50 g of sugar, and 20 g of honey (about one tablespoon). Mix together.

Add half an egg to the mixture and beat it before incorporating it. Save the other half for another recipe.

Once the egg is incorporated, add the dry ingredients: 100 g of all-purpose flour, 30 g of cornstarch, 10 g of unsweetened cocoa powder, 0.5 teaspoon of baking powder, and 0.25 teaspoon of baking soda.

Mix the dry ingredients with a spatula, then finish mixing with your hands, pressing the dough without kneading it.

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Roll out the dough to a thickness of 2 to 3 mm and cut out circles of your desired size, typically 6 cm in diameter.

Place the circles on a baking sheet lined with parchment paper or a silicone mat, or grease and flour the sheet if necessary.

Bake in a preheated oven at 180°C for 5 minutes without touching them. Do not remove them until they are completely cool.

Generously fill the alfajores with 400 g of dulce de leche, pressing slightly to ensure it reaches the edges.

Press chopped nuts (about 100 g) around the edges of the alfajores, ensuring they stick to the dulce de leche.

Melt 300 g of milk chocolate in a double boiler or microwave in 30-second intervals. For a smoother consistency, add 30 ml of neutral oil.

Before coating the alfajores, pour some melted chocolate over the remaining chopped nuts until they are well coated.

Dip the alfajores in the melted chocolate, using two forks to remove excess chocolate. Use a spatula or knife to scrape off any remaining chocolate.

Transfer the coated alfajores to a baking sheet lined with parchment paper or a silicone mat, and before the chocolate dries, sprinkle some of the previously coated nuts on top.

If the chocolate thickens, return it to the double boiler or microwave for about 30 seconds to melt it again.

Once dry, remove the alfajores and enjoy them with mate, tea, or coffee.
