1 whole chicken, skin-on, cut in half

2 cloves garlic, minced
4 cups long-grain rice, soaked and rinsed
1 tsp salt
1 tsp mixed spices
1 tsp curry powder
1 tsp coriander
1/2 tsp cinnamon
1/2 tsp cumin
6 cups chicken broth
1/8 tsp orange food coloring
1 tbsp water
1 tbsp olive oil
1/2 tsp coriander
1/2 tsp garlic powder
1/2 tsp paprika
1 garlic clove, minced
1 hot chili pepper
1/4 cup cilantro leaves
4 tomatoes

In a pot over the heat, add oil and sauté the chicken while stirring for 5 minutes.

Add the whole spices (cinnamon, bay leaves, cardamom, cloves, and cardamom pods), salt, and stir for 2 minutes.

Add the water, cover, and simmer for 30 minutes until the chicken is cooked.

Place the chicken in a lined baking tray, strain the broth aside.

Prepare the chicken grilling mixture by mixing oil, coriander, garlic powder, and paprika.

Brush a layer of the grilling mixture onto the chicken and broil in the top oven rack for 10 minutes.

In a pot over medium heat, add clarified butter, onion, and garlic. Stir together for 2 minutes.

Add the rice and the mixed spices, curry powder, coriander, cinnamon, cumin, and salt. Stir for 1 minute.

Pour the chicken broth over the rice until it's submerged.

Let the rice boil on high heat for 3 minutes until the broth level goes down to the rice's level.

Reduce heat to the lowest setting, cover, and let it cook for 20 minutes.

Remove from heat and mix the orange food coloring with water, then add it to the rice.

Use a small dish with oil and the lit charcoal to create smoke. Cover for 10 minutes.
