Salt the rib-eye steak heavily and place it in a hot skillet.
Cook the steak without touching it to create a golden crust.
After a few minutes, check the color and flip the steak to cook the other side for about three minutes.
Remove the steak from the skillet and let it rest for about ten minutes.
Discard the burnt oil from the skillet but keep the cooking juices.
Add freshly ground black pepper to the skillet and a few knobs of butter to create a pepper butter.
Add cognac to the skillet and let it reduce quickly, creating a glaze.
Pour in about 300 ml of beef broth and raise the heat to reduce it by two-thirds or three-quarters.
Add the same amount of heavy cream as the beef broth and bring it to a boil to reduce and concentrate the flavor.
Add crème fraîche for acidity and richness, along with some reserved cognac and lemon juice.
Season with salt and pepper before returning the steak to the skillet with its juices.
