Soba Chicken & Black Pepper Sauce Stir-Fry

Cut ginger into smaller pieces to avoid large chunks in the dish.
Trim the roots off the green onions and remove any yellowing layers.
Bring a pot of water to a boil for the soba noodles.
Heat olive oil in a large skillet over medium-high heat.
Sauté the onions and bell peppers in the skillet until slightly softened.
Add sliced shiitake mushrooms to the skillet.
Once the water is boiling, add soba noodles to cook according to package instructions.
Remove the sautéed vegetables from the skillet if they are getting too dark.
Add chicken breast to the skillet and cook until browned.
Add garlic and ginger to the skillet with the chicken.
Return the sautéed vegetables back into the skillet with the chicken.
Pour in light soy sauce and black pepper sauce, adjusting for salt as necessary.
If desired, add chicken stock for more sauce and then cornstarch to thicken.
Add cooked soba noodles to the skillet and toss everything together to combine.
If noodles stick, add a bit of soy sauce or sesame oil to loosen them up.
Optionally, add cilantro for garnish before serving.
