Recipe Information
Slow Cooker Minestrone
Heat the olive oil in the Instant Pot.
Add the soffritto preparation and sautรฉ until fragrant.
Add the fresh minestrone and sliced champignon mushrooms.
Stir in the passata di pomodoro and salt.
Pour in the water and mix well.
Close the lid and cook under pressure for a short time.
Release the pressure and serve, optionally garnished with parmesan rind.
