Blended Celery Tomato Soup

1 tbsp Olive Oil
4-5 big cloves Garlic
1 big size Onion
3-4 sticks Celery (approx. 1 1/2 cup)
1 big size Tomato
2 cups Water
1/4 tsp Black Pepper
Salt to taste
1 tbsp Chili Sauce
2 tbsp Tomato Ketchup

Chop garlic, onion, celery, and tomato into manageable pieces for sautéing and boiling.

Heat 1 tbsp olive oil in a pot over medium heat.

Add 4-5 big cloves of garlic and sauté briefly until fragrant.

Add 1 big size chopped onion and sauté until it begins to soften.

Stir in 3-4 celery sticks (approx. 1 1/2 cup) and sauté for 1-2 minutes.

Add 1 big size chopped tomato and sauté for another 1-2 minutes.

Pour in 2 cups of water. Bring the mixture to a boil and then simmer for 12-15 minutes, or until the celery is nicely soft.

Using an immersion blender, carefully blend the contents directly in the pot until a fine, smooth purée is achieved.

Add 1/4 tsp black pepper and salt to taste to the blended soup and mix well.

Stir in 1 tbsp chili sauce and 2 tbsp tomato ketchup. Mix thoroughly to combine all flavors.

Bring the soup to a boil again and let it simmer for 2-3 minutes to allow the flavors to meld and the soup to thicken slightly.
