200g stock liquid (made from 6g dried radish and 1 dried shiitake)
370g water
55g sesame paste
1/2 tablespoon sesame oil
1 tablespoon soy sauce
1 tablespoon miso
1 teaspoon millet sugar
1/2 teaspoon salt
chili oil (as needed)
radish sprouts (as needed)

Put dried radish and dried shiitake in 200g of water and simmer over a low heat for 5 minutes. Or, infuse in cold water overnight.

Boil the noodles for 2 minutes.

In a ramen bowl, combine sesame paste, sesame oil, soy sauce, miso, millet sugar, and salt.

Pour hot soup stock from step 3 into the bowl to dissolve the paste.

Once dissolved, pour the rest of the soup stock into the bowl.

Put boiled noodles, topping ingredients, and radish sprouts on top. Pour chili oil at last.
