1

Grab a bowl and add 1/2 cup of pearl barley.

2

Cover the barley with enough water to submerge it.

3

Swish your hand around in the water until it becomes cloudy, then rinse the barley until the water is clear.

4

Cover the bowl loosely and leave it on the countertop for about 4 hours.

5

Alternatively, you can use a food processor to grind the barley into a powder, which eliminates the need for soaking.

6

In a food processor, add 1/4 cup of pistachio and almonds and pulse until they are in small pieces.

7

Take 10-12 dates, remove the seeds, and add them to the food processor. Pulse a few times until chopped.

8

In a pot, add 4.5 cups of milk and heat on medium until hot.

9

Add the soaked pearl barley and the chopped dates to the pot.

10

Cook for about 8-10 minutes, stirring to separate the dates as they heat up.

11

Add 1/2 teaspoon of cardamom powder and honey to taste, adjusting according to your sweetness preference.

12

Add the chopped almonds and pistachio to the mixture and stir well.

13

Cover the pot with a lid and cook on medium-low for 25-30 minutes.

14

Check the consistency by uncovering the lid and stirring; it should be thicker when done.
