Add 3/4 cup almond butter, 1/2 cup honey, and 1 teaspoon vanilla extract into a stovetop pan over medium heat.
Stir occasionally until the almond butter and all the ingredients have melted.
Turn off the heat and stir in 3 cups of multi-grain Cheerios.
Pour the mixture into an 8x10 inch pan and press down firmly to evenly spread out the mixture.
In a double boiler, or by boiling water in a stovetop pot and placing a heat-resistant bowl over it, add 1/4 cup dark chocolate chips and 1/4 teaspoon coconut oil.
Stir slowly until the chocolate chips have melted.
Drizzle the melted chocolate over the cereal bars.
Place in the freezer to set for 1 hour.
Once set, slice into bars and enjoy.
