Welcome to Chef Mooney, celebrating St. Patrick's Day with champ mashed potatoes.
Use 900 grams of Desiree potatoes, chop them into rough chunks, and cook until soft, keeping them even in size.
Add a good pinch of salt to the water and bring it to a boil for the potatoes.
While the potatoes are cooking, prepare the sausages; use pork sausages with herbs.
Make about 2 cups of gravy following the packet instructions, adding 1 tablespoon of plum sauce for flavor.
Slice 1 large spring onion into a quarter cup measure, which is about 2 ounces.
In a pan, combine half of the heavy whipping cream with milk to fill the quarter cup, and reduce it on the stove until thicker.
After about 35 minutes, check the potatoes for softness by running a knife through them; drain them and return to the pot to dry out moisture.
Turn off the heat, mash the potatoes, and add the reduced cream mixture and spring onions; season with salt and pepper, mixing well.
Prepare the gravy from the packet and stir in 1 tablespoon of plum sauce; adjust to taste if desired.
Serve the champ topped with sausages and plum gravy, and enjoy the inexpensive meal.
