In a saucepan, boil the full fat milk and add the butter, letting it melt down.
Add salt and black pepper to the milk and butter mixture.
Add the chopped chives and spring onions to the milk and butter mixture.
Cook on medium heat while stirring in the corn flour.
Continue to cook on medium heat while stirring until the corn flour cooks out and thickens the sauce.
Mash the boiled potatoes.
Add the sauce into the mashed potatoes and mix until well combined.
Traditionally, make a little welt on top of the champ potatoes and serve with a knob of butter.
