Italian sausage

🥗Healthier: turkey sausage

💰Cheaper: pork sausage

Turkey sausage reduces fat while maintaining flavor.

Parmesan cheese

🥗Healthier: Nutritional yeast

💰Cheaper: Pecorino Romano

Nutritional yeast is dairy-free and adds a cheesy flavor.

1

In a large pot or Dutch oven, heat the olive oil over medium heat.

2

Add the Italian sausage, breaking it apart as it cooks. Cook until browned, about 5-7 minutes.

3

Add onion, garlic, carrots, and celery to the pot. Cook for 3-4 minutes until vegetables begin to soften.

4

Stir in tomatoes, chicken broth, and season with salt and pepper. Add Rind of Parmesan Cheese.

5

Bring the mixture to a simmer allowing the flavors to meld together for 10-12 minutes.

6

Add the pasta and cook according to the package directions, usually about 8-10 minutes, or until al dente.

7

Once the pasta is cooked, stir in the heavy cream and Parmesan cheese. Let the soup simmer for an additional 2-3 minutes to thicken slightly.

8

Add the spinach to the soup and stir until wilted.

9

Adjust seasoning if needed with more salt and pepper.

10

Garnish with parsley.
