Season the local beef with fresh seasoning, salt, garlic, onion, green onion, and pimento.
Pressure cook the seasoned beef for about 15-20 minutes to soften it.
In a separate bowl, soak onion in curry water for two hours to extract flavor.
Heat oil in a pot and add green onion and garlic to flavor the oil.
Add garlic first, then ginger and other spices to the pot.
Add the seasoned beef to the pot after the garlic is translucent.
Measure one cup of rice and add two cups of water or stock for cooking.
Add four cups of water to the pot with the beef and curry mixture.
Add pigeon peas and sweet peppers to the pot.
Bring the mixture to a boil, then cover and reduce heat to low.
Cook for about 30 minutes until the beef pilaf is ready.
