4 ½ cups Water
2 tbsp Cooking Oil
1 stalk Celery - chopped
Half Onion - chopped
Half Bell Pepper - chopped
5 cloves Garlic - chopped
3 stalk Green onion - chopped
Andouille Sausage - sliced
Rotisserie Chicken - cubes
2 Bay leaf
Salt & Pepper

Brown the Andouille Sausage then set aside.

Saute Onion, Bell pepper, and Celery for 2-3 minutes.

Add 2 boxes of Zatarain's Jambalaya Mix and 4 ½ cups of water; stir to mix the flavors together.

Cover the pot and let it boil for about 5-6 minutes.

Once it boils, lower the heat and let it simmer for about 10-12 minutes without stirring.

After 10-12 minutes, add the cooked sausage and chicken on top of the jambalaya and cover again.

Let it steam for 2-3 minutes.

Fluff the rice and mix everything together, then add the green onions before serving.
