150 g prawns/shrimp (optional)
1 large onion, chopped
3–4 garlic cloves, minced
1–2 tomatoes, chopped (or ½ cup crushed tomatoes)
1 ½ tsp paprika
1 tsp cayenne
1 tsp oregano
½ tsp black pepper
Salt to taste
1 bay leaf
1 ½ cups long-grain rice (uncooked)
3 cups chicken broth
2 tbsp olive oil or butter
Spring onions (for garnish, optional)

Heat oil in a large pot. Add onion and cook until soft and translucent. Add garlic and sauté for about 30 seconds.

Stir in paprika, cayenne, oregano, black pepper, and salt. Add chopped tomatoes and cook until soft and saucy.

Stir in rice to coat with the spices and sauce. Pour in chicken broth and add the bay leaf.

Stir well to mix all ingredients and bring the mixture to a gentle boil.

In a separate pan, heat a little oil. Sear sausage slices until lightly browned, then remove. Add chicken pieces, cook until golden, and then add both to the main pot with the rice mixture.

Reduce heat to low, cover, and cook for 20–25 minutes without lifting the lid. Check if rice is tender and liquid is absorbed.

Stir in shrimp during the last 5 minutes and cook until pink.

Remove the bay leaf, fluff the rice gently, and top with spring onions if desired.
