Spread the cassava in a single layer on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
Remove from the oven and let cool slightly before serving.
Garnish with fresh rosemary if desired.
Serve warm as a side dish or snack.
