Roasted Okra

1 pound okra
2 teaspoons vegetable oil
1/2 teaspoon salt
5 minced garlic cloves
3/4 teaspoon coriander
3/4 teaspoon cumin
3/4 teaspoon smoked paprika
1/8 teaspoon cayenne
1/3 cup jarred roasted red peppers, chopped
1/2 teaspoon salt
1/4 teaspoon sugar
3 tablespoons mayo
1/2 teaspoon lime juice
1/4 teaspoon lime zest

Choose okra pods that are about the same size.

Take the caps off the okra and split them in half lengthwise.

Add 2 teaspoons of vegetable oil and 1/2 teaspoon of salt to the okra.

Toss the okra to ensure they are evenly coated in oil and salt.

Place the okra cut side down on a baking sheet.

Cover the baking sheet with foil and roast in a 425 degree oven for 12 minutes.

Remove the foil and roast for another 12 minutes.

While the okra roasts, heat 2 teaspoons of vegetable oil over medium heat until it shimmers.

Add 5 minced garlic cloves and cook until they start to brown.

Add 3/4 teaspoon of coriander, 3/4 teaspoon of cumin, 3/4 teaspoon of smoked paprika, and 1/8 teaspoon of cayenne to the garlic and cook until fragrant.

Remove the garlic and spice mixture from heat and transfer to a bowl.

Chop 1/3 cup of jarred roasted red peppers and add to the bowl with the garlic and spices.

Add 1/2 teaspoon of salt and 1/4 teaspoon of sugar to the bowl and stir together.

Cool the mixture in the fridge for 5 minutes.

After 12 minutes of roasting, remove the okra from the oven and let it cool on the baking sheet for 5 minutes.

Finish the dipping sauce by adding 3 tablespoons of mayo, 1/2 teaspoon of lime juice, and 1/4 teaspoon of lime zest to the cooled mixture and stir to combine.

Serve the roasted okra with the dipping sauce.
