Three Bean Salad

1 can green beans, drained
1/2 can chickpeas, rinsed and drained
1/2 can red kidney beans, rinsed and drained
1-2 tablespoons chopped bell pepper
3 tablespoons chopped yellow onion
2 tablespoons extra virgin olive oil
3-4 tablespoons apple cider vinegar
1 teaspoon granulated sugar
black pepper to taste
sea salt to taste

Drain 1 can of green beans and add to a bowl.

Rinse and drain 1/2 can of chickpeas and add to the bowl.

Rinse and drain 1/2 can of red kidney beans and add to the bowl.

Chop bell pepper and add roughly 1-2 tablespoons to the bowl.

Chop yellow onion and add roughly 3 tablespoons to the bowl.

In a separate bowl, combine 2 tablespoons of extra virgin olive oil, 3-4 tablespoons of apple cider vinegar, 1 teaspoon of granulated sugar, black pepper to taste, and a little sea salt.

Stir the dressing ingredients together until well combined.

Pour the dressing over the bean and vegetable mixture and stir well to combine.

Transfer the salad to a covered container and store it in the refrigerator.

Allow the salad to marinate overnight for the flavors to blend.
